 Tofu
is a food with high nutritional value that gives an optimum
alternative to animal based proteins, obtained from processing
Soya. It is very low in calories and carbohydrate yet rich
in protein and unsaturated fatty acid and Soya lecithin.
These good fats play an important role in keeping the balance in
our body, and the Soya lecithin helps to prevent cholesterol being
stored in our arteries. It is believed that Tofu, besides preventing
damage to our circulatory system, could also heal the adverse
effects of prolonged use of animal and dairy products in our diet.
High in Vitamins, in particular B12, which is difficult to source in
vegetarian diets, it is also high in protein and fibre and is easily
digestible. Tempeh is made by fermenting the yellow Soya beans
in a process that preserves all the nutritional qualities of Soya, which
are then easily absorbed by the body thus making it a valuable source
of energy.
